Cheesy Cauliflower Casserole

- 1 large cauliflower hear, cut into bite size florets
- 1 box (8oz) cream cheese, softened
- 1/3 cup sour cream
- 1 1/2 cup sharp cheddar, finely shredded
- 1 1/2 cup Monterey Jack cheese, finely shredded
- 1/4 cup yellow onion
- 2 tsp garlic powder
- 2 tsp paprika
- 6 slices cooked bacon, chopped
- 1/4 cup green onions, chopped
- Salt and pepper to taste
In a medium pot, steam cauliflower for about 10 minutes or tender when poked with fork and drain.
Preheat oven to 400°F. Grease a 9 x 9 inch baking dish.
In a large bowl, mix cream cheese, sour cream, cheddar cheese, Monterey Jack, onion, garlic powder and paprika until combined. Salt and pepper to taste. Stir in cauliflower, 1/2 of the bacon and green onion.
Add mixture to prepared casserole dish and top with remaining bacon. Bake for 20-25minutes or until the cheese is melted. Top with remaining green onion and serve immediately.
