If shrimp is not cooked, add one tbsp butter to a medium saute pan over medium heat. Add shrimp and cook 3 minutes on each side or until shrimp are done and opaque in color. Remove tails.
Slice cucumber in 1/4" slices, and place on serving platter. Set aside.
In a medium-size bowl add remaining ingredients and mix well.
Take 1 tbsp mixture and place on top of each cucumber slice, followed by shrimp.
Garnish each piece with chopped cilantro and a few flakes of maldon salt.
Serve immediately or store covered in refrigerator until ready to serve.
