Frozen or fresh cauliflower?
If you’re in a time crunch, save some time with chopping and use frozen cauliflower florets. Steam the cauliflower per the package instructions, drain, and keep on going! Don’t tell anyone, but more often than not, you can find frozen cauliflower already chopped for cheaper than you can buy a fresh head. Be sure when purchasing frozen cauliflower that it hasn’t been packaged with unnecessary preservatives, flavor enhancers, or added sodium.
Tips for the ultimate cheesy cauliflower casserole:
- Avoid the sticky casserole dish mess by spraying with nonstick spray.
- Panicking over the amount of fat in the ingredients of this cheesy cauliflower casserole? I use light sour cream, light cream cheese or Neufchâtel, low fat cheese, and turkey bacon. To be honest, my family doesn’t taste the difference!
- I like my cauliflower a little crunchy still, but if you’re wanting a softer texture, steam the cauliflower for about 10-15 minutes before combining with the other ingredients.
- When I’m really looking for an easy dinner idea, I’ll throw in shredded rotisserie chicken, making a one-pot meal and easy clean up for me!
- This can be the perfect make-ahead meal: prepare the casserole ahead of time, but instead of baking, cover and throw in the fridge until you’re ready to eat. Set it out on the counter for about 20 minutes, then bake in the oven at 400°F for 20-25 minutes.

Cheesy Cauliflower Casserole
Ingredients
- 1 large cauliflower hear, cut into bite size florets
- 1 box (8oz) cream cheese, softened
- 1/3 cup sour cream
- 1 1/2 cup sharp cheddar, finely shredded
- 1 1/2 cup Monterey Jack cheese, finely shredded
- 1/4 cup yellow onion
- 2 tsp garlic powder
- 2 tsp paprika
- 6 slices cooked bacon, chopped
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a medium pot, steam cauliflower for about 10 minutes or tender when poked with fork and drain.
- Preheat oven to 400°F. Grease a 9 x 9 inch baking dish.
- In a large bowl, mix cream cheese, sour cream, cheddar cheese, Monterey Jack, onion, garlic powder and paprika until combined. Salt and pepper to taste. Stir in cauliflower, 1/2 of the bacon and green onion.
- Add mixture to prepared casserole dish and top with remaining bacon. Bake for 20-25minutes or until the cheese is melted. Top with remaining green onion and serve immediately.
