Yes, yes, and yes. These chocolate strawberry yogurt clusters put a refreshing, healthy spin on the classic chocolate covered strawberry, sure to still satisfy your sweet tooth, making them a great snack option as well!

WHAT YOU’LL NEED

  • Fresh strawberries: Bright red, ripe strawberries bring the perfect sugary sweetness Juicy and ripe strawberries provide a burst of natural sweetness and a refreshing, tangy flavor to this recipe as well as a good amount of Vitamin C!
  • Greek yogurt: Choose your favorite creamy Greek yogurt for this one! Vanilla or strawberry flavored works best for this recipe, but plain works just as well, especially if you add in some honey and vanilla extract.
  • Chocolate chips (or your go-to melting chocolate): Milk, white, or dark chocolate pair nicely with the tart yogurt inside, and you can even add an extra drizzle on top with white chocolate to make them extra fancy!
  • Honey and Vanilla: For added sweetness and flavor if you choose a plain Greek yogurt.
  • Coconut oil: To help the chocolate set when dipping yogurt clusters.

HOW TO MAKE FROZEN CHOCOLATE COVERED STRAWBERRY YOGURT BITES

  1. Mix the yogurt and strawberry filling – In a bowl, combine chopped fresh strawberries with Greek yogurt, honey, and vanilla.
  2. Form clusters – Spoon small clusters (a cookie scoop works great for this) of about 2 tbsp of the filling of the mixture onto a cookie sheet lined with parchment paper. This will yield about 12 clusters.
  3. Freeze clusters – Place clusters in the freezer for at least 1 hour until firm.
  4. Melt the chocolate – In a small bowl, microwave the chocolate and coconut oil in 30-second intervals and stirring until smooth.
  5. Dip the frozen yogurt clusters – Once the clusters have frozen and the chocolate has been melted, dip each cluster into the melted chocolate and place back on the baking sheet. Optional: sprinkle with malden salt, sprinkles, chopped nuts, shredded coconut, or anything other topping of your choice!
  6. Serve and enjoy – Let the clusters sit for a few minutes to allow the chocolate to harden and enjoy! OR…
  7. Freeze again – Place them back in the freezer until you’re ready to serve.

TIPS FOR THE BEST CHOCOLATE COVERED STRAWBERRY YOGURT BITES

  • Use fresh fruit: This recipe calls for fresh strawberries, because frozen berries can too wet and mushy which can affect the texture and consistency of the frozen yogurt cluster.
  • Freeze for an hour: It is recommended to allow the clusters to freeze for a full hour to freeze completely. This will help make sure the yogurt clusters stay together while you’re dipping them in the warm chocolate.
  • Scoop yogurt clusters: Using a large spoon or cookie scoop, form 3-4tbsp yogurt clusters. Place clusters on a parchment paper-lined cookie sheet.
  • Storing the clusters: Store clusters in an air-tight container in the fridge for up to 4 days or in the freezer for up to 1 month for best results. If you are planning to double/triple the batch, you can layer the clusters in a container using a piece of parchment paper in between each layer to keep from freezing together.
  • Thaw to enjoy: Either thaw at room temperature for 10-15 minutes, or warm in the microwave for 12 seconds to easily cut through the frozen yogurt.

MAKE IT YOUR OWN

  1. Switch up the fruit: Not a strawberry fan? No problem! These clusters work great with fresh, chopped raspberries, blackberries, pineapple, or peaches.
  2. Yogurt swap: Try another flavored yogurt such as another fruit, caramel, or even coconut. Oikos has a ton of different flavors you can try!
  3. Make them crunch – Add crushed pecans, walnuts, or peanuts to the melted chocolate for an extra crunch.
  4. Go coconutty – Add shredded coconut to the yogurt mixture or as a topping on the melted chocolate.
  5. Peanut butter goodness: Peanut butter fans in the house? Add 2 tbsp peanut butter into the yogurt cluster mixture.
  6. Pack in the protein – Greek yogurt is already a great source of protein, but adding a scoop of protein powder (vanilla or strawberry flavored) will make these the perfect protein snack for on-the-go.

Ingredients
  

  • 2 cups fresh strawberries, diced
  • 1 cup Greek yogurt (plain, vanilla, or strawberry flavored)
  • 2 tsp honey
  • 2 tsp vanilla
  • 3 cups dark chocolate chips milk or white chocolate work well too
  • 2 tsp coconut oil
  • Maldon salt (optional)

Instructions
 

  • Prepare a cookie sheet by lining with parchment paper.
  • In a bowl, mix together the strawberries, yogurt, honey, and vanilla.
  • Using a large spoon or cookie scoop, form 2-3 tbsp clusters of the yogurt mixture and place on prepared cookie sheet.
  • Place in freezer for about an hour, or until frozen.
  • Remove clusters from freezer and allow to set out on the counter for a few minutes.
  • In a microwave-safe bowl, add chocolate and coconut oil.
  • Microwave in 20 second intervals, stirring in between rounds, until chocolate is melted and smooth.
  • Dip clusters in melted chocolate and return to parchment paper. While chocolate is still soft, top with maldon salt or any other preferred topping (sprinkles, shredded coconut, chopped nuts, etc).
  • Let set for about 5 minutes before eating. If not eating immediately, place in fridge or freezer according to storing instructions in post above.
