Asian Crunch Salad with Sesame Ginger Dressing
Ingredients
- 2 cups spinach
- 1/2 cup green cabbage, chopped
- 1/4 cup red cabbage, sliced
- 1 cup cucumbers, sliced
- 1/2 cup edamame
- 1/4 cup cilantro
- 3 tbsp carrots, slivered
- 3 tbsp slivered almonds
- 1 1/2 tbsp sunflower seeds
- 2 green onions, sliced
- 2 tsp sesame seeds
Sesame Ginger Dressing
- 1/4 cup sesame oil
- 3 tbsp peanut butter
- 3 tbsp water
- 2 tbsp rice vinegar
- 2 tsp ground ginger
- 2 tsp sesame seeds
Instructions
- In large a bowl, combine all salad ingredients and toss.
- In a small mixing bowl, whisk together dressing ingredients.
- When ready to serve, pour dressing over prepared salad and toss to coat.
