This Pumpkin Spice White Russian cocktail is everything you need to get in the festive spirit this season. An autumn twist on the classic White Russian is easy, creamy, and everything pumpkin-ey.
Nothing gets me more excited than when I start seeing cornstalks on neighborhood porches, fall holiday ingredient set-ups in the grocery store, and local farmsteads beaming with pumpkins. But the real treat is sitting on the front porch, feeling the crisp air, and sipping on my favorite cocktail; and I think I just found it.
WHAT’S IN A PUMPKIN SPICE WHITE RUSSIAN
White Russians typically call for half-and-half or heavy cream. Since we are using pumpkin spice creamer and Bailey’s almondmilk liqueur, which are both on the heavier end, we’re balancing it out with regular milk (I used 1% for this recipe). To cut the vodka bite and help get that creamy, vanilla-ey flavor, I also used whipped cream vodka…yum!
The combination of pumpkin spice creamer and pumpkin puree gives the perfect hint of fall to this classic cocktail. When mixing your cocktail, be sure the puree has completely mixed in to avoid any clumps in your drink. The whipped cream top and sprinkle of pumpkin pie spice will leave the tastebuds dreaming of all things fall. I spotted this pumpkin spice whipped topping in my Aldi the other day, so I suppose I’ll just have to make another batch of these this weekend to try it out!
HOW TO MAKE THIS FESTIVE COCKTAIL
EASY! That’s what we’re going for with this cocktail; dip your cocktail glass rim, shake up your ingredients, pour over ice, and garnish.
- Begin by gently pressing your cocktail glass rim in caramel dip (I used a light caramel dip).
- Then dip the caramel rim in a mixture of brown sugar and pumpkin pie spice.
- In a cocktail shaker or tall glass, add the cocktail ingredients and shake/stir until the pumpkin puree is mixed well.
- Add ice to your glass and pour in your cocktail.
- Top with whipping cream and a sprinkle of pumpkin pie spice.
- Now, grab a blanket, kick your feet up, and start worrying about who has to get up to make the next round!
