  • green cabbage
  • red cabbage
  • slivered almonds
  • sunflower seeds
  • edamame
  • cucumber
  • sesame seeds
  • shredded carrots
  • cilantro
  • green onion

What’s in the Dressing?

The dressing in this Asian crunch salad is something special, let me tell ya! Grab a small bowl and whisk together the peanut butter, sesame oil, water, rice vinegar, sesame seeds, salt, and pepper. Pour the dressing over the salad right before you’re ready to eat and toss to coat. Be sure not to pour the dressing on too long before eating so the spinach and cabbage stays crisp for that extra crunch of freshness.

Ingredients
  

  • 2 cups spinach
  • 1/2 cup green cabbage, chopped
  • 1/4 cup red cabbage, sliced
  • 1 cup cucumbers, sliced
  • 1/2 cup edamame
  • 1/4 cup cilantro
  • 3 tbsp carrots, slivered
  • 3 tbsp slivered almonds
  • 1 1/2 tbsp sunflower seeds
  • 2 green onions, sliced
  • 2 tsp sesame seeds

Sesame Ginger Dressing

  • 1/4 cup sesame oil
  • 3 tbsp peanut butter
  • 3 tbsp water
  • 2 tbsp rice vinegar
  • 2 tsp ground ginger
  • 2 tsp sesame seeds

Instructions
 

  • In large a bowl, combine all salad ingredients and toss.
  • In a small mixing bowl, whisk together dressing ingredients.
  • When ready to serve, pour dressing over prepared salad and toss to coat.
