WHAT TYPE OF PEARS TO USE
For this particular recipe, a crispy, juicy pear is the one you want. Bartlett pears or Anjous Gold pears are perfect for this recipe with their white centers and crispy texture. The salty prosciutto peared with the zingy balsamic and creamy feta (see what I did there) brings a flavor fusion unlike any other!
HOW TO MAKE BALSAMIC REDUCTION FOR PROSCIUTTO WRAPPED PEARS
If you’re like me, and don’t have balsamic reduction on hand, it’s really quite simple. Here’s the how-to:
- In a small saucepot, pour 2 cups balsamic vinegar and bring to a simmer over low heat. This sounds like a lot, but trust me it will cook down. Also, don’t get anxious and turn up the heat! Be patient and leave on low, otherwise the vinegar will easily burn.
- Let the vinegar simmer for about 30 minutes, stirring frequently. It should be thickened up and be able to coat the back of a spoon when dipped in.
- Let the reduction cool completely before drizzling on the pears. You can stick it in the fridge to speed up this process.
- Note: do NOT take a big wiff while the reduction is heating up as tempting as it may be…talk about burnt nostrils!

Ingredients
- 2 pears
- 3 oz prosciutto
- 6 oz feta cheese crumbles
- balsamic reduction for drizzling
Instructions
- Slice each pear into 8 slices.
- Add a few crumbles of feta cheese on each pear slice.
- Wrap each pear with a slice or two of prosciutto and leave as is or secure with a toothpick.
- Drizzle balsamic reduction over wrapped pears and sprinkle feta crumbles on top.
