Easy Spinach Balls Appetizer

These easy spinach balls are a guaranteed crowd-pleaser for any gathering! Dress them up or dress them down, they’re the underrated appetizer of our generation.

I will say, trying to find stuffing mix in July is a little difficult. So, if it’s not around the holidays (or maybe it is and the shelves are wiped) and your stores aren’t carrying any, I just get the 3-pack from Amazon: seasoned stuffing.

Of course, you will always get the funny looks when you explain that these are spinach balls, what with the bad rap that comes with spinach. But, once they taste the blend of seasoned stuffing, cheese, and spices, the dish will be wiped in a matter of minutes.

These little guys are also the perfect freezer-friendly side to make ahead of time. Just pop them in the oven or microwave before you’re ready to serve, making them your go-to for any quick and delicious app.

Also, did I mention how SIMPLE these are to make?

How to make spinach balls

First of all the ingredients: spinach, stuffing, parmesan, onion, egg, garlic, butter. Doesn’t get much easier or on-hand than that!

Next, combine all of the ingredients in a large bowl and give it a good stir.

Spinach Ball Mixture

Taking chunks of about 1/3 cup, roll into little spinach balls, and bake ’em up at 350°F for 20-25 minutes. If I’m feeling really lazy, I mean fancy, I’ll use this cookie scoop to make perfect little circles.

Another little tip is to use parchment paper when you’re baking them. They’ll slide right off when you serving them up and makes for MUCH easier clean-up.

Spinach Balls

Ingredients
  

  • 24 oz Frozen spinach
  • 2 cups Pepperidge Farm Stuffing (the blue bag)
  • 4 Eggs
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup Onion, diced
  • 1 stick Unsalted butter, melted
  • 1 tbsp Garlic, minced
  • 1/2 tsp pepper
  • 1/4 tsp garlic salt

Instructions
 

  • Prepare a baking sheet by lining with parchment paper.
  • Thaw spinach and drain well (really squeeze out the water, this helps the spinach balls stick together).
  • Combine all ingredients into a large bowl and mix well.
  • Preheat oven to 350°F.
  • Scoop 1/3 cup mixture and shape into a ball. Place on prepared baking sheet about 2 inches apart.
  • Bake for 20-25 minutes, until stuffing has become golden brown and crispy.
