Pesto on Flank Steak?
Pesto has a place much beyond pasta dishes, I promise! I keep a jar of Classico Traditional Pesto Basil Pesto in the pantry at all times.. pasta sauce, chicken marinade, bruschetta, steak topping, pesto can be so versatile!
How to Cook Flank Steak
I used a flank steak for this recipe, but you can really use any kind of steak that suits you. To begin, I light salted the top of the steak and set aside. Heat 2 tbsp of butter in a cast iron over medium heat. When the butter has melted and the cast is hot, place the tomatoes, garlic, and steak in the skillet and sear each side for 5-8 minutes, depending on the preferred doneness. If you like yours a little more well-done and don’t necessarily want the extra black char on the outside of the steak by cooking it on high heat for longer, place a lid the cast iron and cook covered for 1-2 minutes. Don’t stray too far from the skillet, though, as this will cook fast and you can’t undo an over-cooked steak!
Once the steak has reached your desired doneness, place on a chopping block and allow to rest for 5 minutes. Top the steak with the pesto and charred tomato and garlic mixture. Begin slicing steak in 1″ wide pieces, working against the grain of the steak. Serve it up alongside this Asian crunch salad and wild rice stuffed acorn squash and enjoy! It never hurts to have a small bowl of pesto sitting out for extra dipping as well!

Pan-Seared Flank Steak with Pesto
Ingredients
- 2.5 lb flank steak
- 2 tbsp butter
- 1 cup cherry or grape tomatoes
- 1/4 cup pesto
- 2 tbsp garlic
- Salt and pepper
Instructions
- Remove steak from packaging, lightly salt top, and set aside.
- Place a 12" cast iron pan over medium heat and add butter.
- When the cast is hot and butter has melted, add the steak, tomatoes, and garlic. Sear steak for 5-7 minutes on each side. Place a lid on the cast iron to increase doneness and lessen charring.
- Remove the steak from heat and place on a chopping block to rest for 5 minutes.
- Drizzle pesto on top of steak, followed by tomato and garlic mixture.
- Slice steak, working against the grain of the meat, in 1" wide pieces, and serve!
