Bacon, Egg, and Veggie Breakfast Bagel Sandwich

When it comes to breakfast, I prefer more savory and hearty than sweet. This loaded breakfast bagel sandwich will keep you fueled up for the morning chaos!

Regret all the years you spent telling yourself you couldn’t eat a bagel because of the CARBS? Yikes! I said it. The big C-word.

The truth of the matter is, sometimes a bowl of cereal just doesn’t cut it to get you through the morning until lunch. Or even a mid-morning snack! It’s those CARBS that are going to give you the fuel to continue being the little energizer bunny that you are. I can immediately feel when I haven’t had enough in the morning. I feel sluggish, I feel hungry, I feel like I must just need another cup of coffee…enter a very vicious cycle.

So, the next time you’re pondering whether or not to grab a bag of bagels at the grocery store, do it. In fact, grab two, because they are delicious and you’re not going to be able to get enough of these breakfast sammiches.

HOW TO STACK YOUR BREAKFAST BAGEL SANDWICH

Loaded might not even be a big enough word to capture what this sammy truly is. Hitting all of the taste and textures, you’ve got salty, sweet, creamy, crunch, I mean, c’mon! Here’s how I stacked mine :

  • everything bagel – duh
  • cucumber slices – this refreshing little crunch addition is perfection
  • tomato – a nice beefy one, otherwise the little slices just fall out when you take a big bite
  • purple cabbage – I wouldn’t steer you wrong
  • bacon – of course seasoned with Adirondack Smoke..is there any other way?
  • fried egg – ya know, with the yolk a little juicy to make the perfect mess
  • sliced avocado – are there breakfast sandwiches without it anymore?
  • red onion – I’m usually not a raw onion fan, but wow
  • arugula and mixed greens – all of the yes
  • Chive and onion cream cheese – because you’ve come this far, why not?

Other fillings to try:

  • Jalapeños
  • Sautéed mushrooms
  • Microgreens
  • Bell peppers
  • Scrambled or hardboiled eggs
  • Sautéed spinach
  • Turkey bacon

Ingredients
  

  • 1 everything bagel
  • 6 cucumber slices
  • 3 slices tomato
  • 1 slice Red cabbage
  • 3 bacon slices
  • 1 egg, fried
  • 1/2 avocado, sliced
  • 3 slices red onion
  • 1/4 cup arugula and mixed greens
  • 2 Tbsp Chive and onion cream cheese
  • Spray olive oil

Instructions
 

  • Heat olive oil in a pan and put on medium heat. Add bacon, season with Adirondack smoke, and cook until your desired crispiness. Remove from pan and pat excess grease with paper towel.
  • Drain bacon grease from pan and wipe with paper towel. Spray lightly with olive oil and add egg. Fry to desired yolk texture.
  • While the egg is cooking, toast the bagel, and begin slicing the veggies.
  • Begin assembling:
    Spread cream cheese on the bagel's top lid. On the bottom lid, begin to stack the rest of the ingredients.
  • Give it a good smoosh of the hand, and enjoy!
