Why choose chicken over beef?

I’m not here to try and convince anyone that chicken is the perfect taste equivalent to beef; it’s not and never will be. BUT there are some other things to take into consideration. The blue cheese in these burgers compliments what the ground chicken flavor brings to the table and you forget you’re even trying to be healthy!

Aside from taste comparison, nutritionally, you’re doing yourself a huge favor. Depending on what percentage of lean meat your usual ground beef is, ground chicken is anywhere from half to 3/4 the amount of calories. Even more-so, those calories are coming from a nutrient that many people are trying to decrease in their diet; saturated fat. The fat composition in the chicken can also be anywhere from half to 3/4 the amount found in beef. In case you haven’t been completely nutritionally convinced yet here’s this: it has just as much protein as beef!

Not a fan of blue cheese? No problem.

Blue cheese does require a particular palate, so if it’s not your jam, try one of these:

  • Sharp cheddar
  • Smoked gouda
  • Swiss
  • Jalapeño cheddar
  • Brie

Let’s Talk Toppings

There’s a time and a place for iceberg lettuce and yellow onions…now is not that time. In other words, don’t short yourself in toppings after you’ve cooked the burger to perfection.

Because of their texture, color pop, and zing, red onions are the favored onions for these burgers! Now, let’s talk leafy greens. Romaine lettuce can be good, but if you can get your hands on some micro greens, spinach, or arugula, your tastebuds will thank you (not to mention the added vitamins). And lastly, red cabbage..who knew this would be the secret ingredient to a burger? An unexpected crunch to match the juicy texture of the burger. As for the condiment, well, I’ve got a BBQ sauce bias for these guys.

Blue Cheese Chicken Burgers

Ingredients
  

  • 1 1/2 lb ground chicken
  • 1/2 cup red onion
  • 5 oz blue cheese crumbles
  • 4 mushrooms, chopped
  • 3 garlic cloves, minced
  • 1 egg
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp bread crumbs
  • 1 tsp Worcestershire
  • 1/2 tsp garlic salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • Olive oil for cooking

Instructions
 

  • In a large bowl, add all ingredients and mix until well-combined.
  • Form 4in diameter, 1in high burger patties and set aside.
  • If cooking on stovetop, heat large skillet or griddle on medium heat with 2 Tbsp olive oil.
  • Once griddle is hot, place patties carefully about 1in apart.
  • Cover and cook for about 15 minutes, flip, and cook uncovered for another 10-15 minutes, or until cooked thoroughly (internal temp of 165°F).

Notes

If grilling, following same cooking time instructions to reach internal temp of 165°F.
